Wisconsin Leads Nation on Cheese Production

Wisconsin, the top cheese-making state since at least 1975, was first again in 2010, during which it produced 2.61 billion pounds of cheese, up from 2.59 billion pounds in 2009 and ahead of California's 2010 total of 2.2 billion pounds. Specialty cheese production grew 10% and now accounts for 21% of Wisconsin cheese production.

USDA Hikes Milk Price Forecast Amid Stronger Exports

USDA predicts that raw milk prices are expected to be higher than previously forecast this year, partly reflecting a weak dollar that’s fueling dairy product exports. Last year, U.S. shipments of cheese, nonfat dry milk and other dairy products totaled $3.76 billion, up 62 percent from 2009, according to the U.S. Dairy Export Council.
